Potassium Sorbate is a chemical and anti-mould with chemical formula C6H7KO2 which is highly soluble . It is used as durability increaser in food industry . It is not poisonous in authorized quantity and has the best effect in PH less than 6. PH=8.4 and efficent viscozity  (anti-bacterial ) in foodstuff (0.3-0.5)%

Potassium Sorbate is a colorless salt and highly soluble which is used as anti-mould in food industry and prevents mould activity in products which leads to corruption . The target point of this durability increaser in a microbial cell , is the enzyme containing Sulfidryl , Oxidative Phosphorylation system and cell's respiratory system. Sorbates also prevent sprout of Spores and the growth of vegetative cells .
Potassium Sorbate is used in meat products ,flour products , the soda pop and prevents mould , fungus and fermentation in cheese . Sorbate increases the lifespan of the products .
